Borgo Santo Pietro is a 300-acre (~120-hectare) organically farmed estate around a 13th-century villa — a healing stopover for pilgrims bound for San Galgano Abbey — found as a ruin in 2001 by Danish couple Jeanette and Claus Thottrup and reopened in 2008. In 2001, Jeanette and Claus Thottrup came across a 13th-century ruin in the Chiusdino countryside, minutes from the Cistercian abbey of San Galgano — home of Tuscany's own sword in the stone. Seven years of restoration later, the house reopened in 2008 with one obsession: that everything — vegetables, cheeses, skincare, bouquets — should be born of the estate. It is today Italy's most complete expression of the luxury garden farm, recognised with 3 Michelin Keys and by the Condé Nast Traveler and Tatler lists.
Fine-dining Saporium — 1 star in the 2026 Michelin Guide Italia, executive chef Ariel Hagen — quite literally cooks the estate: kitchen gardens, an artisan dairy (cheese and yogurt made in-house), sheep, pigs, beehives. The Trattoria sull'Albero, built around a centuries-old oak, keeps the classic register, with a gourmet farmers' market on Mondays. A Florentine sister, Saporium Firenze, extends the philosophy to the city.
The stone-clad holistic spa adjoins the laboratory that produces Seed to Skin — the house's 100%-natural skincare line, now an internationally distributed brand. An infinity pool over the valley, 13 acres of gardens (~300,000 plants), and for sea-minded guests the Satori, a hand-carved five-cabin sailing yacht chartering the Mediterranean. The estate lives by its gardens: May–June for the rose garden and 300,000 plants at their peak, September for harvests and light. Summer 2026 has its own signature: FESTVM TERRAE — open-air garden dinners cooked over flame, rustic stalls and one long shared table — on June 27, July 11, August 1 and September dates. Every Monday evening, the gourmet Farmers' Market animates the Trattoria sull'Albero.
